What I Eat in a Day | Uni Edition

Whilst doing my weekly food shop early this week, I was quite excited to get some ingredients for a few new recipes. I always love finding new things to make at uni, and so I thought I would share some new ideas I found this week in a blog post. The dinner I made has been quite a staple of mine since I came to uni (because it's one of my faves), but the rest of my meals are new to my uni-meal lists! So, lets begin with breakfast...


I really like having this recipe for breakfast because it feels like a healthy way to start the day, is quick and easy to make  and is also super tasty. I started by putting some Greek yoghurt in a bowl and topped that with some squeezy honey (which adds such a lovely sweetness). On top of this, I added some berry granola and chopped strawberries - with a little bit more honey on top because I love it! With this, I also like to have a lemon tea in a morning, so I just put 2 slices of lemon in my fave mug with some boiled water - yum!


I was at home on the day I was making this post, and so I had a little bit of extra time to make something for my lunch. With that in mind, I decided to make some pasta. I cooked my pasta through, fried some chopped spring onions and peppers and mixed it all together with some red pesto. It is a really tasty option for lunch, and I am definitely going to look to making it the night before so that even when I have a busier day at uni, I have this recipe to take with me!


For dinner today, I made very much a staple meal in my uni life - vegetable stroganoff. I think I do quite a simplistic version of a stroganoff, which means it's super easy to make!

First, the rice. My brother taught me the easiest way to guarantee the perfect rice each time, so I thought I would share! Simply start to boil the rice in the water, and as soon as it begins to boil, turn it down to a simmer for 18 minutes. And voila - the perfect rice.

In terms of the veg, I just fried some chopped pepper, mushrooms and onions and then poured some double cream over the top (enough to cover the veg and leave some spare for pouring over and flavouring the rice). To this cream, I added some mixed herbs too!

And there you have it, plate up and your vegetable stroganoff is ready to be eaten!


I thought I'd quickly mention typical snacks for me. I often reach for a couple of biscuits with a cup of tea, sometimes fruit and another fave of mine is a breakfast bar. Anything that I can pop in my bag easily and take to uni is usually a winner.


Thought I might as well add in what I had to drink in the day too! I have quite a few cups of tea throughout the day - Yorkshire of course - (and not forgetting my lemon tea in a morning also), and then besides that it's either a glass of water or blackcurrant juice at the moment!

So, that is everything that I eat in a day at uni. I find these kinds of blog posts really helpful myself in getting inspired and finding new things to cook, and so I hope this post has done the same for you today!
