Zoe Sugg's 'Weekend Brunch' Inspired Breakfast

This morning I woke up and came downstairs to watch Zoe Sugg’s new vlog (link here). In the video, she made the ‘Weekend Brunch’ recipe from her new 'Cordially Invited' book for breakfast. I immediately wanted to try something similar because it looked so delicious. And so, I went to my copy of the book and cooked myself up some breakfast. I didn’t have all the ingredients for the full recipe, so I used what I had in to make a similar version of the original. The original recipe in the book serves 4, which is ideal for when you have guests to stay, but I just made enough for myself. Here are the ingredients I used:

- 6 Baby Tomato’s
- A drizzle of Olive Oil
- Slice of Tiger Bread
- Balsamic Glaze
- 1 egg
- A sprinkle of paprika




The recipe was so simple to follow, and I would definitely recommend getting the book ‘Cordially Invited’ by Zoe Sugg. Essentially, I heated my oven to 180°C, then placed my baby tomatoes (drizzled with olive oil) onto a baking tray and put them into the oven for 20-30 minutes. Just before the tomatoes had finished, I boiled my egg for 4 ½ minutes in a pan of boiling water. I then put my egg into a bowl of cold water to peel the shell off. After this, I toasted and buttered by bread. Everything was now ready to serve, so I plated everything up, sprinkled it with paprika and added a drizzle of balsamic glaze.


I absolutely loved this recipe, I will definitely be making it again. I love finding new things to make for breakfast and this book has so many lovely ideas.
