Tanya Burr's Lemon Drizzle Loaf

Ever since Tanya Burr’s book ‘Tanya Bakes’ came out, I have repeatedly gone back to this recipe. It is guaranteed to be lovely and the recipe is really easy and straight forward to follow. I always think a good lemon drizzle loaf/cake recipe is a real staple for anyone who loves baking, and so when I found Tanya’s, I was delighted. I thought I would write a blog post about my attempt to make Tanya’s Lemon Drizzle Loaf as it is one of my favourites.

You will need:
·      170g unsalted butter (softened, extra for greasing)
·      170g caster sugar
·      3 eggs
·      170g self-raising flour
·      1 teaspoon baking powder
·      Zest of 2 lemons
For the drizzle:
·      150g icing sugar (extra for dusting)
·      Juice of 2 lemons



As weird as it may sound, I even like the ingredients list for this recipe, it seems to use staple ingredient that I more often than not have around the house, which saves me a trip to the shop before I start baking.


In terms of the instructions, I will leave a link to Tanya’s recipe book at the end of this post, however it is pretty straight forward. Just cream the butter and sugar together until fluffy, add the eggs, flour, baking powder and lemon zest; mixing until smooth. Then pour the mixture into the loaf tin and cook at 180°C for 30 minutes. As for the drizzle, whilst the loaf is cooking, mix together the icing sugar and lemon juice. When the loaf is fresh out of the oven and warm, poke holes in it with a skewer and pour the drizzle over – leaving it to cook in the tin. Then when you’re ready, dust with icing sugar and eat!



As I have said, I absolutely love this recipe and it never fails to be tasty – which I definitely put down to the recipe in the book and not my baking (I am still learning!). For this recipe, I like to add Lemons to the top of the loaf for extra decorations.
